Oligosaccharide Analysis One specific approach to detection of added sugars involves detection by gas chromatography of minor oligosaccharides which are produced as byproducts of certain hydrolysis syrups. Figure 2 shows chromatograms of two apple juices, one containing 10% of added hydrolyzed inulin syrup. The marker peaks for inulin oligosaccharides are indicated in the second chromatogram. This method has been effective at detection of corn syrup, hydrolyzed inulin syrup and invert sugar syrup in fruit juices.
