Anthocyanin Pigment Analysis Profiles of the anthocyanin pigments of a juice by HPLC can be useful in detecting adulteration of red juices, such as raspberry, strawberry and cranberry. Figure 8 shows a typical anthocyanin profile of pure cranberry juice. Figure 9 shows a more complex pattern found in grape skin extract.
